Keto Dinner | Low Carb Mexican Cauliflower Rice – Delicious Keto Side Dish

Our Low Carb Mexican Cauliflower Rice recipe tastes almost identical to the Mexican rice dish our local restaurant. We serve it with our Pork Carnitas, Mexican Beef, and White Chili. Leftover Mexican Cauliflower Rice can be stored in the fridge for up to 4 days, or frozen for up to 3 months. I love making this mexican cauliflower rice into a bowl with a large-ish dollop of sour cream, sliced avocados for that buttery avocado flavour, jalapenos and lots of coriander and lime. This Hawaiian Cauliflower Fried Rice is packed with goodies and so simple to make!  Chopped pineapples and sugar-free ham, peppers, onions and scrambled eggs make this “rice” a meal that you’ll crave for busy weeknights.   It’s also kid approved, low in carbs and Whole30 compliant! I’ll openly admit that I’ve tried to make paella on more than one occasion and failed miserably. It’s probably a combination of not having the right paella pan or not using the correct method, but I can never get it to turn out quite right. That being said, I still love the concept of cooking rice with a bunch of other super flavorful ingredients in one pot, so this Spanish Chickpeas and Rice, which is loosely based on paella, was born. No expensive seafood or saffron, but still tons of flavor in one dish. I wanted to go vegetarian for this recipe, so I subbed chickpeas for the meat and seafood usually found in paella. I added plenty of spices like smoked paprika, cumin, cayenne, and oregano (flavors you’d normally find in chorizo), to make sure this dish had plenty going on. Artichoke hearts added flavor and texture, and helped make this dish more of a one pot meal than just a rice and bean pilaf. Growing up in a very traditional Korean household, we had fried rice for dinner at least once a week. It was my mom’s go-to clean-out-the-fridge meal, especially on those busy nights where she was too tired to cook. Now I love fried rice just as much as the next person, but I realized it was time to change it up with this restaurant-style Mexican rice. You can serve as is or alongside some tacos or enchiladas. We loved it as a main dish, digging our way in with tortilla chips. Either way, we loved the change from our usual Asian-style fried rice and have made this at least 3 times this week! To start, you’ll want to combine some uncooked rice, chicken broth, butter, salsa, garlic powder, black beans, salt and pepper into a medium pot. These Fiesta Chicken Rice Bowls take just 30 minutes to make and are perfect for meal prep! This dish is a simple mix of rice, chicken, salsa, corn and bell peppers. You can find them at Costco or similar types of salsa in the fresh dips/salad dressing section of the grocery store.
