Keto Dinner | Zucchini Noodles with Scallops & Bacon

There have been far too many treats around my house lately. Which was fun for a while but once the novelty wore off, I found myself craving simpler, savory things. When I first started eating Paleo I didn’t allow myself to do “Paleo” treats. As someone who used to bake CONSTANTLY, I didn’t want to fall into the trap of just replacing one type of treat with another. So it was fun to dabble in sweet things once again, but after a while it became clear that my tastes and palate have changed a LOT since those days. Most of the time, what I genuinely want is healthy, nutritious food. Who would have thought?! So these zucchini noodles really hit the spot: delicious fresh vegetables topped with sweet scallops, salty bacon and finished with the tang of fresh lemon. Perfect. The trick to cooking these isn’t complicated. You just need to make sure that they are really DRY when you add them to the pan to sear them. Make sure the pan is as hot as you can manage without the bacon fat beginning to s...

Keto Dinner | Vegan Zucchini Noodle Pesto Pasta

Today I’m excited to share a guest post with you by Catherine Cockrill! She’s currently finishing up her dietetic internship with Virginia Tech (my internship alma mater), and she’s been working with me over the past few months, learning the ropes of blogging, food photography, and social media–and now publishing her own post. She came up with this recipe especially for Veggie Quest: It’s gluten free, vegan, and 100% vegetables! It’s higher in fat with a creamy avocado pesto sauce, but you can easily get away with using half the avocado if you’re watching your fat intake. I can vouch that it’s delicious, and we had a blast cooking together and taking the photos. I’ll let her take it from here! Zucchini needs no introduction these long summer days. Gardens are overflowing with this veg and summer squash recipes are filling up my Pinterest feed. I’ve previously shared my Zucchini Noodle Lasagna, my Crustless Vegetable Quiche with Zucchini, and more recently, a far more edgy way to use zu...

Keto Dinner | Creamy Zucchini Fettuccine

Everyone should learn to make fettuccine Alfredo at home. It’s remarkably easy, and shockingly better than what you’re likely to get in an average restaurant. This version adds zucchini to the mix and cuts back on the butter and cream, making a lighter, more interesting flavor. Who can resist cheesy, creamy Alfredo sauce? This summery version adds zucchini, a hefty dose of chile flakes if you like spice, and some lemon to brighten it all up. It comes together quickly — in the time it takes for the fettuccine to boil, the vegetables can be sautéed and the creamy sauce put together. It’s a comforting pasta dish that can be made on a busy weeknight. My favorite way to serve this zucchini sauce is to mix it with some cooked pasta (spaghetti, penne, or linguine), or pour a generous amount of the sauce over boiled rice. You may also enjoy it with your favorite grain (quinoa, farro, bulgur, barley, buckwheat, etc.). Or just serve it with some fresh bread. It’s zucchini season and you’ve got t...

Keto Dinner | Zucchini Enchiladas

This recipe for zucchini enchiladas is a perfect weeknight meal that the whole family will love! Made with “zucchini tortillas,” shredded chicken, enchilada sauce and shredded cheese. It’s low carb, gluten-free, paleo-friendly and keto-friendly! Zucchini season is almost here! If you’re looking for some zucchini recipe ideas or ways to swap bread and pasta for zucchini, you’ve gotta try this zucchini enchiladas recipe! It’s a Mexican inspired dinner recipe that is packed with protein, flavor and nutrition! Honestly, you may not even miss the tortillas! Just sayin… Start with 3 cups of shredded chicken. You can use chicken breast, chicken thighs or even ground chicken or ground turkey. What works well is using leftover rotisserie chicken. I also like to boil some chicken breasts with water and bay leaves for 30 minutes and then shred the chicken while it’s warm. These Low Carb Chicken Zucchini Enchiladas have all of the flavor with none of the guilt! I’ve skipped the tortillas and inste...

Keto Dinner | Thai Peanut Zucchini Noodles

Thai Peanut Zucchini Noodles are spiralized zoodles sauteed with shredded carrots, bell pepper, and green onions, tossed in this easy peanut sauce. This 15-minute zucchini noodles recipe makes the perfect side dish, main course, or weekday salad and includes meal prep instructions. Using a vegetable peeler can take a little longer, but I LOVE this option for making wide zucchini noodles. This also works in a pinch, but again, I recommend the tabletop version if you want to spiralize large amounts of zucchini noodles into spaghetti strands. During the summer I love eating meals that are lighter, and sometimes I’m just not in the mood for a salad.  These VegetarianThai Peanut Zucchini Noodles are the perfect hot meal that won’t weigh you down! Now that it’s zucchini season, my spiralizer has been working overtime.  Do you own a spiralizer?  I love mine, but I’ll admit that sometimes I get lazy and I buy my zucchini noodles at the store.  It can get costly over time, so...

Healthy Recipes | Beef Enchilada Zucchini Boats

I love healthy recipes that are full of flavor, and these zucchini boats are just that! That’s the great thing about this recipe. You’ll feel like you’re treating yourself to some naughty bad-for-you comfort food, but really you’re not. 🙂 Sure you can leave off the cheese to make them extra healthy, but I don’t know why you would want to do that. What’s an enchilada without cheese? 😉  This culinary masterpiece was born out of my full on passion for Mexican food! I wanted to create a way to eat enchiladas without all the carbs but still loaded with flavor! These Ground Beef Enchiladas are stuffed into a carved zucchini boat instead of wrapped in a tortilla. Sounds strange at first but believe me, you will be floored by the outrageous flavor and won’t even miss the tortilla! I think I just felt like everything was spiraling out of control. I have had to have faith so many times in life and I just got tired. Tired of fighting. I wondered if God really cared, why things had to be so ...

Healthy Recipes | Zucchini Lasagna

Low carb and keto friendly, this easy zucchini lasagna with ground meat is a healthy alternative to your typical lasagna. This casserole is so good that you won’t miss the noodles. This saucy zucchini lasagna is the perfect low carb solution to your Italian comfort food cravings. Wheat-based lasagna noodles are replaced by thin zucchini slices, and you won’t even notice the pasta’s gone. In fact, I like this version a lot better than traditional pasta-based lasagna. Most of the flavor is in the sauce itself, so taking away the lasagna noodles doesn’t detract much. This Zucchini Lasagna is low fat, gluten-free, Keto friendly, ridiculously delicious and only 368 calories! This lasagna uses zucchini in place of pasta thereby reducing calories. Guilt free! We’re talking lots of layers of zucchini,  mushrooms, a delicious beef sauce and, of course, loaded with lots of cheese.  At 368 calories a serving, you can eat lots of this decadent and delicious lasagna, guilt free! Seriously!...
