Keto Dinner | Delicious Lemon-Garlic Keto Pasta Using Yellow Squash

If you’ve been craving pasta, like I do every once in a while (I used to crave it every day!) this recipe will help you out. Instead of pasta, you’re eating shaved yellow (summer) squash, which is then sauteed in a cast iron pan, and tossed with delicious garlic, herbs, and lemon juice. It’s one of my favorite new keto recipes, and the lemon juice is key! To start, every keto-er should own a cast iron pan, and this keto pasta recipe is just one delicious reason why. This recipe was originally dubbed “Squash Pappardelle” by Tim Ferriss in his 4-Hour Chef book, which is a book I highly recommend for everyone and anyone on a keto or paleo diet. This pasta recipe is all about fresh ingredients. The zucchini should be firm and the tomatoes sweet. If you have a hard time finding good, flavorful tomatoes, it is better to use canned. We love canned San Marzano tomatoes as well as the options from Muir Glen. The easiest way to make zucchini noodles is to use a spiralizer. They make long, curly ...

Keto Dinner | Vegan Zucchini Noodle Pesto Pasta

Today I’m excited to share a guest post with you by Catherine Cockrill! She’s currently finishing up her dietetic internship with Virginia Tech (my internship alma mater), and she’s been working with me over the past few months, learning the ropes of blogging, food photography, and social media–and now publishing her own post. She came up with this recipe especially for Veggie Quest: It’s gluten free, vegan, and 100% vegetables! It’s higher in fat with a creamy avocado pesto sauce, but you can easily get away with using half the avocado if you’re watching your fat intake. I can vouch that it’s delicious, and we had a blast cooking together and taking the photos. I’ll let her take it from here! Zucchini needs no introduction these long summer days. Gardens are overflowing with this veg and summer squash recipes are filling up my Pinterest feed. I’ve previously shared my Zucchini Noodle Lasagna, my Crustless Vegetable Quiche with Zucchini, and more recently, a far more edgy way to use zu...

Healthy Recipes | Mexican Pasta Skillet

I seriously think I shaved ten years off my life and sprouted a few gray hairs. First of all…I know zero about basketball. I never played it, and didn’t watch much of it when I was in school. Second of all…when you run the scoreboard in basketball, you have to keep track of score, fouls, which player got the foul and how many he/she has had so far, and time!! I don’t know how much you know about basketball, but you have to start and stop the clock each time the ref blows the whistle…which is constantly. And then to top it off, we had Friday off as well for this big annual basketball tournament! A three day week, woop woop! I will say, however, that the carefree-ness of this long weekend was marred by my attempt to keep score for a few hours each day at the basketball tournament. So last week was pretty awesome. We had a snow day on Monday…say whaaaaaattt?!? A snow day! Well, really it was an “ice” day…there was barely any snow. After driving a looooooong time over Thanksgiving break, t...

Healthy Recipes | One Pot Pizza Pasta

One pot is all you need for this mouth-watering Pizza Pasta! It’s loaded with your favorite pizza toppings like ground beef, pepperoni, onions, peppers, and olives! The sky is the limit! I’m always looking for those One Pot “hidden gems” that both my husband and my toddler will eat. This is definitely one of those meals. I first published it in 2016, and decided to dig it out of the archives and freshen it up a bit for ya. You’ll see the ingredients below are super basic and you probably already have most of these things in your house. I like the fact that you can top this pasta with any favorite pizza topping that you want. So once you have your ingredients, it’s time to get cookin! The steps are so VERY easy. I like to brown mild Italian ground sausage in the pan first then drain the excess fat. I cut up about half the pepperoni into strips and toss them in to heat through with the sausage. Then I simply add the jar of marinara, water and box of rigatoni and bring to a boil. Hi frien...
