Healthy Dessert | One Pot Mexican Black Bean Sweet Potato Quinoa

One Pot Mexican Black Bean Sweet Potato Quinoa is a vegetarian one pan Mexican quinoa with sweet potatoes, black beans and plenty of flavor! I’m in the fall spirit, but the weather isn’t cooperating.  It’s been in the 90’s with barely a cool-down in the evening, and to boot, my air conditioning broke for the second time in 2 weeks.  That won’t stop me from eating my soups and chilis, however I’ll eat them no matter what the temperature is outside.  All I can say is, thank goodness they don’t require an oven! I’ve got a fall meal for you today that’s reminiscent of chili but a whole lot heartier.  This one pot Mexican quinoa is a simple meal that you can get on the table in under 40 minutes, and you only have one pot to wash! Here we are again… it’s a new month and another 30 Minute Thursday! If you’re new here, let me explain. On the first Thursday of each month a few of my blogging friends and I each share a recipe that can be made in 30 minutes or less, start to fi...

Healthy Dessert | Thai Peanut Chicken and Sweet Potato Noodles

Thai Peanut Chicken and Sweet Potato Noodles are a healthy and gluten-free twist on your favorite Thai takeout order. Easy, colorful, and delicious! Hello, hello everyone – I hope you had a wonderful Thanksgiving and are having a great week so far! We had a super holiday scarfing smoked turkey with all the fixin’s at my parents house (so thankful my Wild Rice Stuffing and Garlic-Sage Green Beans were hits at a bunch of your homes!) then spent the rest of the weekend hanging out with Ben’s family while they were in town visiting. Hard to believe both Halloween and Thanksgiving are in the books – next stop, Christmas! If you’re like me and wanting to indulge without the guilt this holiday season, whip up this light and tasty dish tonight – and fight your dining partner for the leftovers to take for lunch the next day. Trust me when I say, if you don’t, you’ll regret it! Let me introduce you to my new favorite dinner. I’m certain it’s my favorite because I couldn’t stop slurping the peanu...

Healthy Dessert | Thai Chicken Curry

I’m over-the-moon, giggly-girly giddy to tell you about today’s Thai Chicken Curry! It’s one of those special recipes we all want and need more of in our lives: a healthy, one-pan dinner that’s dead simple to prepare yet so outrageously tasty, it will leave you wowed by your own kitchen prowess. Ready in about 45 minutes (more than half of which is hands off) this Thai coconut curry recipe is fast enough for a weeknight but special enough for company. The first time I made this Thai Chicken Curry with coconut milk, I was worried I would find it lacking, because my expectations for it were especially (bordering on unrealistically) high. Not only do I want you to find the very best recipes here, but also I’ve eaten my way through copious amounts of authentic Thai chicken curry in Thailand, so I know exactly how fabulous it can be. In my world, curry is simple, heart healthy and delicious. I remember even my Ukrainian grandma used to make chicken curry. It is simply a combo of coconut mil...

Healthy Dessert | Skinny Chocolate Cake

I am normally not one for ‘skinny’ desserts. If I want brownies or chocolate cake, then I am going to eat brownies or chocolate cake. Not smashed black bean brownies (anyone tried those?) or that chickpea healthy cookie dough I’ve seen floating around Pinterest lately.  No mixer needed! Combine the ingredients for the cake in a bowl and pour into your baking dish. You’ll end up with a puffy and thick chocolate cake. Let that cool completely and then frost and of course, add some sprinkles or other toppings. THIS healthy chocolate cake is delicious too. I’m not going to say it tastes exactly the same as the 6-ingredient gooey Swedish chocolate cake, because that wouldn’t be true. Even the sweet potato part is easy. I just cook a medium sweet potato in the microwave until soft, then I split open the skin and scoop out the flesh. It mashes really easily with a fork, or if you’d prefer to get it completely smooth you could pulse it for a few seconds in your food processor. This healthy...

Healthy Dessert Vеgаn Cаrаmеl Pорсоrn

The vegan caramel ѕаuсе fоr thіѕ саrаmеl popcorn іѕ mаdе wіth ѕаlt, vеgаn buttеr, аlmоnd mіlk, maple ѕуruр, cane sugar аnd vаnіllа. This caramel іѕ so addictive thаt I knew I hаd tо dо a ѕераrаtе post оn a vеgаn саrаmеl sauce (уеѕ yes уеѕ!). Thе key іngrеdіеnt tо turning thіѕ dеlісіоuѕ саrаmеl sauce іntо ѕаltеd саrаmеl рорсоrn is, *drumrоll* bаkіng ѕоdа. Baking soda completely changes thе tеxturе оf thе caramel as іt’ѕ bubblіng аnd mаkеѕ іt muсh lighter, аnd muсh еаѕіеr tо coat the рорсоrn wіth. Thіѕ wаѕ thе mіѕѕіng ingredient from оur first vegan caramel рорсоrn аnd let mе tell уоu, thе dіffеrеnсе is рhеnоmеnаl. All уоu have tо do nеxt is соаt thе рорсоrn, thеn bake. Dоnе, аnd dоnе.  Healthy Dessert Vеgаn Cаrаmеl Pорсоrn  PREP TIME: 10 MINS  COOK TIME: 15 MINS  TOTAL TIME: 25 MINS  Juѕt wаntеd to let уоu knоw I juѕt mаdе thіѕ and аddеd a lіttlе сіnnаmоn and іt wаѕ SO уummу!
