Lately I’ve been on a real chili making binge. Can’t stop, won’t stop. I cooked up two batches last week and froze one for evenings when I don’t feel like cooking or simply don’t have the time. Sometimes I work out in the evenings and by the time I get back home my desire to start chopping vegetables and doing dishes is negative 1 million. This Pulled Tandoori Chicken is a really easy Indian dish, a “dump-and-go” type of Instant Pot recipe. The resulting shredded meat is not only tender and flavorful but also versatile in its many uses. Typical tandoori chicken is marinated before cooking. This recipe skips that step, and instead all of the ingredients the chicken, marinade, and spices are combined together in the pot and pressure cooked simultaneously. My husband has been asking me to make fish in tomato sauce for some time. He wanted it to taste like the canned sardines in tomato sauce that he had growing up in Ukraine. Of course this Cod Fish in Tomato Sauce recipe is far better since it doesn’t come from a can! He agreed. The fish is flaky and juicy and the sauce is legit. I seriously think I shaved ten years off my life and sprouted a few gray hairs. First of all…I know zero about basketball. I never played it, and didn’t watch much of it when I was in school. Second of all…when you run the scoreboard in basketball, you have to keep track of score, fouls, which player got the foul and how many he/she has had so far, and time!! I don’t know how much you know about basketball, but you have to start and stop the clock each time the ref blows the whistle…which is constantly. And then to top it off, we had Friday off as well for this big annual basketball tournament! A three day week, woop woop! I will say, however, that the carefree-ness of this long weekend was marred by my attempt to keep score for a few hours each day at the basketball tournament. So last week was pretty awesome. This Hawaiian Cauliflower Fried Rice is packed with goodies and so simple to make!  Chopped pineapples and sugar-free ham, peppers, onions and scrambled eggs make this “rice” a meal that you’ll crave for busy weeknights.   It’s also kid approved, low in carbs and Whole30 compliant!
