Keto Dinner | Turkey Lettuce Wrap Tacos With Tomato - Avocado Salsa

These Turkey Lettuce Wrap Tacos are a perfect Low-Carb dinner and this tasty recipe is also low-glycemic, gluten-free, and  can easily be Keto if you use higher-fat ground beef! Use Lettuce Wraps to find more recipes like this one. The story about these Turkey Lettuce Wrap Tacos started on Twitter when Marisa from Food in Jars was talking about this turkey taco recipe years ago, and when I checked the recipe, I just couldn’t wait to try it right away. I first used romaine lettuce, and of course I never manage to make a recipe just like it’s written, so I added some green onions (and a lot more cilantro) to the turkey mixture, and I used a very generous amount of tomato-avocado salsa. What makes this turkey tacos recipe so good is the chiles, cumin, and chopped cilantro that seasons the turkey, and believe me, these turkey tacos are a complete keeper, something you’ll make over and over. I love tacos and LOVE Mexican food. But what I love the most is that tacos can be so versatile. ...

The cod is quickly pan seared before being set aside and the tomatoes are added to the pan and blistered over medium-high heat until the burst and get nice and caramelized, juicy and tender. The garlic, butter and lemon juice are added before adding fresh chopped parsley, basil and green onions all of which give this dish that feeling of summer! Keto Dinner | Avocado Cucumber Tomato Salad with Balsamic Vinaigrette

Avocado Cucumber Tomato Salad with Balsamic Vinaigrette – The perfect bright & fresh Summer Salad! This salad is so good!  I love the crunchy veggies paired with the creamy avocado and topped with a tangy homemade balsamic vinaigrette dressing. Avocado Cucumber Tomato Salad with Balsamic Vinaigrette is the perfect bright & fresh Summer Salad!  It's crunchy, creamy, and tangy. I prefer to make this fresh tomato salad with cherry or grape tomatoes because they hold their shape better than chunks of a larger tomato (like beefsteak or heirloom). I also love using cherry or grape tomatoes when I can find them in different colors, it makes such a beautiful presentation! The only time I would choose to use a larger tomato for this particular salad is if it’s tomato season and I run into a particularly beautiful lot of juicy ripe tomatoes.  Tomato salad is exactly what it sounds like…a salad where the main ingredient is tomatoes plus a bunch of other tasty additions. I th...

Healthy Recipes | Cod Fish in Tomato Sauce

My husband has been asking me to make fish in tomato sauce for some time. He wanted it to taste like the canned sardines in tomato sauce that he had growing up in Ukraine. Of course this Cod Fish in Tomato Sauce recipe is far better since it doesn’t come from a can! He agreed. The fish is flaky and juicy and the sauce is legit. It can be served warm or cold.  The sauce is lightly tangy and sweet – we modified the sauce portion of this recipe from The New Ukrainian Cookbook. Oh p.s. have you tried capers? If you haven’t, don’t be afraid of them. For a loooong time I thought capers were scary – I’m not sure why, but it kept me from discovering them. They taste like salty mustard flavored pickles and they are a great addition to this dish. You can buy a small jar for $1-something. This super easy and tasty Cod Fish in Tomato Sauce is perfect for pairing with rice, grits, or pasta. Your meal will be ready to serve in about 30 minutes. You definitely don’t want to skip this recipe, frie...

Healthy Recipes | Creamy Sun-dried Tomato Chicken

Chicken cooked in a creamy garlic parmesan and sun-dried tomato sauce all in one pan in under 30 minutes. Serve with zucchini noodles, veggies or a salad for a low-carb protein packed lunch or dinner!  The trick to making this chicken super flavorful is using lots of garlic. I usually opt in for at least 3-4 cloves but if you’re not a fan of garlic I suggest using at least 2 cloves. For the base, I like to use heavy cream (great keto option) but half & half or substituting half the heavy cream with chicken broth or water will also work. I also like to add in a cup or two or baby spinach to the sauce for some added color and texture but that’s completely optional. I went to clean the pantry and much to my surprise, I found not one but two jars of sun dried tomatoes. I was surprised because we don’t buy them that often, but when we do, I use them up as soon as possible. They’re so good! Not sure how I let these slide by… We gotta talk about this creamy sun-dried tomato sauce chic...

Healthy Recipes | Italian Sausage, Spinach and Tomato Soup

Italian Sausage, Spinach and Tomato Soup is a gluten-free soup recipe full of healthy, hearty ingredients. Just 30 minutes from fridge to table! Hey you, I hope you had a wonderful weekend! We didn’t do anything too terribly exciting, but it went by in the blink of an eye regardless. On Saturday I forced myself to put on makeup at 5pm to get Chipotle for the family, just so I could say I left the house that day, then on Sunday we all went for a long drive, knowing an impending storm would likely keep us stuck indoors for the next 48 hours. Oh man, I’m boring myself – is it spring time yet?! ? Cannot wait for jam packed weekends of sun + fun – this cold weather is for the birds! Anyway, as I mentioned we’ve got a HUGE ice storm on the horizon – it’s supposed to ice rain for the next 24 hours straight – so we also stocked up on some essentials before hunkering down yesterday evening. Almond milk, eggs, wine… (like I said, the essentials!) plus the ingredients to make another batch of my ...
