This easy Instant Pot chili verde is a keto and paleo friendly recipe using chicken thighs, tomatillos, and chile peppers. Chili verde is a saucy green stew made with fresh tomatillos, hot peppers, onions, and garlic. It has that unique tomatillo taste, a bit tart and fruity in flavor. Juicy and tender, these easy low carb meatballs with sauce are made in just a few minutes in your Instant Pot!  These keto friendly Instant Pot meatballs are the perfect topping for cooked spaghetti squash or zoodles!  A Hungry family favorite! Traditionally made in a clay oven{tandoor}, which many of us have now adapted to outdoor grills, indoor ovens and now the moistest version of all is the luscious and spicy Tandoori Chicken – Instant Pot! Hope you had a great Memorial day weekend! We had a fun long weekend – we got to hang out with our cousins, played soccer tournament and ran a 5K race. Although it rained all day in the Northeast and was bit chilly for the memorial day bbq, we did not give up on our plans. We decided to bring our cookout indoors. I hope everyone had a very Merry Christmas and didn’t eat too much? I sure know I did and now I’m looking to ease into 2019 with some easy and semi-healthy dinner choices. This Instant Pot Meatloaf would probably fall more into the category of easy for sure. Not that it’s unhealthy but there are still some carbs creeping in when you add the mashed potatoes, and the two always have to be together in my opinion. You could swap out the potatoes for a creamy mashed cauliflower side instead and chop those carbs right out of the picture though!
