Healthy Dessert | Skinny Chocolate Cake

I am normally not one for ‘skinny’ desserts. If I want brownies or chocolate cake, then I am going to eat brownies or chocolate cake. Not smashed black bean brownies (anyone tried those?) or that chickpea healthy cookie dough I’ve seen floating around Pinterest lately.  No mixer needed! Combine the ingredients for the cake in a bowl and pour into your baking dish. You’ll end up with a puffy and thick chocolate cake. Let that cool completely and then frost and of course, add some sprinkles or other toppings. THIS healthy chocolate cake is delicious too. I’m not going to say it tastes exactly the same as the 6-ingredient gooey Swedish chocolate cake, because that wouldn’t be true. Even the sweet potato part is easy. I just cook a medium sweet potato in the microwave until soft, then I split open the skin and scoop out the flesh. Lately I’ve been on a real chili making binge. Can’t stop, won’t stop. I cooked up two batches last week and froze one for evenings when I don’t feel like cooking or simply don’t have the time. This Pulled Tandoori Chicken is a really easy Indian dish, a “dump-and-go” type of Instant Pot recipe. My husband has been asking me to make fish in tomato sauce for some time. He wanted it to taste like the canned sardines in tomato sauce that he had growing up in Ukraine. Of course this Cod Fish in Tomato Sauce recipe is far better since it doesn’t come from a can! He agreed. The fish is flaky and juicy and the sauce is legit. It can be served warm or cold.  The sauce is lightly tangy and sweet – we modified the sauce portion of this recipe from The New Ukrainian Cookbook. Oh p.s. have you tried capers? If you haven’t, don’t be afraid of them. For a loooong time I thought capers were scary – I’m not sure why, but it kept me from discovering them. They taste like salty mustard flavored pickles and they are a great addition to this dish. You can buy a small jar for $1-something. I seriously think I shaved ten years off my life and sprouted a few gray hairs. First of all…I know zero about basketball. I never played it, and didn’t watch much of it when I was in school.
