Healthy Dessert | One Pot Mexican Black Bean Sweet Potato Quinoa

One Pot Mexican Black Bean Sweet Potato Quinoa is a vegetarian one pan Mexican quinoa with sweet potatoes, black beans and plenty of flavor! I’m in the fall spirit, but the weather isn’t cooperating.  It’s been in the 90’s with barely a cool-down in the evening, and to boot, my air conditioning broke for the second time in 2 weeks.  That won’t stop me from eating my soups and chilis, however I’ll eat them no matter what the temperature is outside.  All I can say is, thank goodness they don’t require an oven! I’ve got a fall meal for you today that’s reminiscent of chili but a whole lot heartier.  This one pot Mexican quinoa is a simple meal that you can get on the table in under 40 minutes, and you only have one pot to wash! Here we are again… it’s a new month and another 30 Minute Thursday! If you’re new here, let me explain. On the first Thursday of each month a few of my blogging friends and I each share a recipe that can be made in 30 minutes or less, start to fi...

Healthy Recipes | Cilantro Lime Chicken with Mexican Quinoa

By now, we all know quinoa is a multi-talented superfood. This healthy grain is a star in everything from breakfast bowls to salmon cakes. Of course, while quinoa is now a staple ingredient in tons of different meals from breakfast to dessert, many of us Day-1 quinoa fans first fell in love with the grain as a rice substitute. Whether it’s a side or a main ingredient, a zesty rice is an important part of any Mexican meal. As usual, quinoa is an excellent substitute for your favorite spicy rice mixes. I’ve started whipping up an easy and tasty batch of this Mexican quinoa with every meal that would usually send me reaching for a box of pre-packaged Spanish rice. Not only do I get to swap rice for all the health benefits of quinoa, but I can also cut back on tons of added sodium. It’s a win-win! Of course, cilantro can be a pretty polarizing flavor. If you’re not a cilantro fan, no worries. The cilantro doesn’t bake with the chicken in this recipe, we just sprinkle it on top after. If ci...

Healthy Recipes | One Pot Veggie Quinoa

One Pot Veggie Quinoa with herbs and creamy Burrata after a long tiring day. That was the thought that came to mind last week when I was out for some work, came home late and my hungry family was waiting for me. I was exhausted and wanted to cook something healthy and just one dish and I was in no mood to baby sit any dish. I was in a hurry to feed my family. I added all the vegetables that I had in my refrigerator. I then wanted a creamy texture to it and yet low calorie so I decided to add burrata. I love the creamy texture of burrata. It gives a certain different flavor to any dish. I quickly added quinoa and water and cooked until done. As soon as I placed the pot on the dining table, One Pot Veggie Quinoa was consumed within minutes and my family loved it. I was content with the fact that I was able to satisfy my family’s tummy with delicious and yet healthy dish. Regular quinoa will work just fine as a substitution if that’s what you have around. Just make sure to thoroughly wash...

Healthy Recipes | Curried Red Lentil Quinoa Soup

Hey guys! I was really excited for the weather to warm up and hope this happens soon! It feels like it is not going to happen anytime soon. It is freezing outside! Today I’d like to share another soup recipe with you – Curried Red Lentil Quinoa Soup. I like red lentils and make soup with them all the time. But I realized that even though I love my go to recipe, it is too light and not filling enough. That’s why I decided to transform is and add extra protein and flavor. The rest is onions, garlic, carrots, (celery if you’d like, I did not use any!), vegetable stock and tomato paste. Very simple to put together and keep in mind, split red lentils cook quickly. Recently I have been enjoying exploring lentils though up until now I have only been using the green du puy lentils. There are many different types of lentils and I wanted to branch out and try a new one. When I was out shopping the bright red lentils caught my attention and I picked some of them up. Despite the fact that we have ...
