Healthy Recipes | Hawaiian Cauliflower Fried Rice

This Hawaiian Cauliflower Fried Rice is packed with goodies and so simple to make!  Chopped pineapples and sugar-free ham, peppers, onions and scrambled eggs make this “rice” a meal that you’ll crave for busy weeknights.   It’s also kid approved, low in carbs and Whole30 compliant! From fried rice with chicken and bacon, to this Mexican spin, and now to this tasty Hawaiian Cauliflower Fried Rice, the lesson learned is clear – cauli rice (although not actually rice) can be incredible in its own right. The brand I used (and adore) in this recipe is Kiva Sun. They actually make other Bison products like ground bison, burgers, etc., but I love their quick and all natural green chili bison jerky. It’s nitrate free, gluten free, low in fat, high in protein, hormone free, MSG free, and SUPER delicious!  And no they did not pay me to say that. Haha. If anyone knows me, they know I love jerky! If you follow me on snapchat, you know that’s my snack of choice. So logically, why...

Healthy Recipes | Beef Enchilada Zucchini Boats

I love healthy recipes that are full of flavor, and these zucchini boats are just that! That’s the great thing about this recipe. You’ll feel like you’re treating yourself to some naughty bad-for-you comfort food, but really you’re not. 🙂 Sure you can leave off the cheese to make them extra healthy, but I don’t know why you would want to do that. What’s an enchilada without cheese? 😉  This culinary masterpiece was born out of my full on passion for Mexican food! I wanted to create a way to eat enchiladas without all the carbs but still loaded with flavor! These Ground Beef Enchiladas are stuffed into a carved zucchini boat instead of wrapped in a tortilla. Sounds strange at first but believe me, you will be floored by the outrageous flavor and won’t even miss the tortilla! I think I just felt like everything was spiraling out of control. I have had to have faith so many times in life and I just got tired. Tired of fighting. I wondered if God really cared, why things had to be so ...

Healthy Recipes | Grilled Salmon with Strawberry Jalapeño Salsa

This Grilled Salmon with Strawberry Jalapeño Salsa is sure to become a staple in your weeknight grilling rotation! The hearty salmon paired with the fresh and slightly spicy strawberry salsa is perfect for an easy and healthy dinner! This past weekend my husband treated me to a celebratory birthday weekend and it was wonderful! The only part that wasn’t ideal was the cloudy, cold, dreary weather that prevented us from going on a hike Saturday morning. Instead of a hike we changed things up and went to one of the biggest and in my opinion best farmers markets in Denver, the Cherry Creek Farmers Market. While the local produce is pretty scarce this early in the year there were plenty of other goodies. Homemade tamales, local honey, kombucha, nut butters, granola, and so many tempting baked goods. We couldn’t resist getting a caramel pecan roll and chocolate chip cookie! This Spice Rubbed Cedar Plank Salmon is rubbed down with a simple spice rub that is spicy and sweet than placed on a ce...

Healthy Recipes | One Pot Shrimp and Orzo

All you need is one pan and 20 minutes to make this quick and easy One Pot Shrimp and Orzo dinner recipe. It’s full of flavor and cleanup is a breeze! This month we’re celebrating the fact that October is National Pasta Month! We all know I’m a huge pasta fan, but growing up I tended to stick to the same few kinds- spaghetti, shells and elbows. That was about it. It wasn’t until a few years ago that I expanded my pasta horizons and tried orzo! I was instantly hooked! I love the shape, how quickly it cooks, etc. It worked perfectly! This is a one dish wonder. The orzo cooks right in the pan in some broth and then you add the shrimp during the last few minutes so they end up perfectly cooked and not overdone! Finish it off with some goat cheese for added creaminess and you’ve got a real winner in my book. This easy shrimp, zucchini, and orzo pasta recipe straddles the line between a one-pot pasta a 30-minute meal dinner. But with a healthy dose of zucchini and a bit of heat from Mexican ...

Even though it’s still technically summer, it always starts to feel like Fall-time when school is back in and it’s September. Regardless of what the calendar says about when Fall-time begins, I always equate September with Fall-time, pumpkin, autumn candles (we’ve already burned throu...

Healthy Recipes | Spanich Chickpeas And Rice

I’ll openly admit that I’ve tried to make paella on more than one occasion and failed miserably. It’s probably a combination of not having the right paella pan or not using the correct method, but I can never get it to turn out quite right. That being said, I still love the concept of cooking rice with a bunch of other super flavorful ingredients in one pot, so this Spanish Chickpeas and Rice, which is loosely based on paella, was born. No expensive seafood or saffron, but still tons of flavor in one dish. I wanted to go vegetarian for this recipe, so I subbed chickpeas for the meat and seafood usually found in paella. I added plenty of spices like smoked paprika, cumin, cayenne, and oregano (flavors you’d normally find in chorizo), to make sure this dish had plenty going on. Artichoke hearts added flavor and texture, and helped make this dish more of a one pot meal than just a rice and bean pilaf. A little fresh lemon on top brightens the whole dish and gives it a slightly summery fee...
