Gnocchi with Turkey and White Beans is a no fuss recipe that you can toss together and cook in one skillet within 30 minutes. Perfect for those busy nights! 

I’m pretty excited about today’s post guys. Not only does this recipe take 30 minutes to whip up, but some of my food blogger friends and I have complied a list of 30 minute meals to help you during those hectic nights. Every first Thursday of every month my food blogger friends and I will share our 30 minute meals with you. How fun!

Only ONE skillet needed for a delicious 30 minute dinner recipe. Garlic, onion, sausage, white beans, gnocchi, tomatoes, and spinach plus spices and cheese mix together to make an incredible dinner in thirty minutes.

Even though it’s still technically summer, it always starts to feel like Fall-time when school is back in and it’s September. Regardless of what the calendar says about when Fall-time begins, I always equate September with Fall-time, pumpkin, autumn candles (we’ve already burned through one ?) and time for more comfort food. ?

This dish is definitely a comfort meal made healthier. It’s packed with veggies, protein (turkey sausage + beans), and a handful of Italian spices. But one of the best things about this meal? It’s ready and on the table in about thirty minutes; and that time is including hands-off cooking time!

Gnocchi with Turkey and White Beans

Prep Time: 10 Mins
Cook Time: 20 Mins
Total Time: 30 Mins

Ingredients:

  • 1-2 tablespoon fresh basil
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • salt & pepper to taste
  • 1 can, 14.5 ounce fire roasted garlic tomatoes
  • 3/4 cup baby spinach, roughly chopped
  • 1 tablespoon olive oil
  • 1 pound Italian seasoned ground turkey
  • 1 teaspoon dried oregano
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 package, roughly 16 ounces potato gnocchi
  • 3/4 can, 15 ounces white beans, drained and rinsed

Instructions:

  1. First, In a large skillet, heat oil over medium-high heat. Add onion and ground turkey. Cook until crumbly, about 5 minutes. Add the oregano and garlic, cook an additional minute. Pour meat into a strainer and set aside for a few minutes. Add skillet back to the heat. If the pan is a little dry, add a little more olive oil and return to medium-high heat.
  2. Second, Add gnocchi and sauté about 5-6 minutes, or until golden brown. Return the ground turkey to the skillet and mix in the beans, tomatoes and spinach. Cook for 2 more minutes. Add any salt and pepper at this time.
  3. Next, Turn off heat, sprinkle with basil and both cheeses. Cover for a few minutes. This will allow the cheeses to melt.
  4. Serve and enjoy!

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat.
