I cook my weekly meals on Sunday, so if I am running late on my schedule I will be sure to bang out a quick keto chili for the week ahead. Chili is always a staple during my weekdays in winter, but I don’t always have time to simmer them for 6 hours at a time. You can freeze and re-heat this as you want, too! That’s why I came up with this.

This a quick and easy go-to keto chili recipe if you’re low on time or just want to get a large amount of food out fast. It’s something that’s pretty minimal effort and isn’t too bothersome if you’re coming home exhausted from work. If you have some sausage on hand, I suggest mixing about 20% in. It’s a great way to put a twist on your usual ground beef, and coax out a great flavor from your vegetables.

When you’re looking for an easy keto meal to prepare, this no-bean keto chili recipe will come to your rescue. And since you can whip it up quickly with pantry staples, there’s a good chance you won’t even need to head to the grocery store ahead of time.

Traditional chili is typically made with beans and a variety of tomato products that will most likely kick you out of ketosis. Fortunately, this keto-friendly recipe is low-carb and extremely satisfying. It’s rich in healthy fats, full of bold flavors, and so easy to prepare — even if it’s your first time.

Easy 30 Minute Keto Chili

Ingredients:

  • 1 1/2 Tbsp. Chili Powder
  • 2 tsp. Cayenne Pepper
  • 1 tsp. Garlic Powder
  • Salt and Pepper to Taste
  • 2/3 medium Onion
  • 1 Tbsp. Olive Oil
  • 1 Tbsp. Cumin
  • 2 lbs. Ground Beef (85/15)
  • 8 cups Spinach (~8 oz.)
  • 1 cup Rao's Tomato Sauce
  • 2 medium Green Bell Peppers

Optional: 1/4 cup Parmesan Cheese

Instructions:

  1. First, Chop the onion and bell peppers to size of your liking. Then, season with salt/pepper and sautee in olive oil on medium-high heat stirring occasionally. Once the beef is browned, reduce the heat of the vegetables to low and let cook.
  2. Second, Put your ground beef in a pot over medium-high heat and start to brown it. Season with salt, pepper, and spices.
  3. Next, Once the beef is browned, add the spinach to the pot. Let stream for 2-3 minutes, then mix in well.
  4. Add low carb tomato sauce to pot, stir well, then reduce heat to medium-low and cook for 10 minutes.
  5. Add in the optional parmesan cheese and then stir together, then add the vegetables in and stir again. Let cook for a few more minutes and serve with toppings of your choice when ready.

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat. They came in a disposable aluminum container that had little partitions with a protein, a starch (usually mashed potatoes – instant), a veggie like corn or peas, and a little square of dessert. Anyway, my favorite was the Salisbury steak – mostly because it came with the cherry pie which was my preferred dessert option.  The steak itself was basically a hamburger with gravy on it, which wasn’t nearly as offensive as the awful gelatinous round slices of fake turkey with gravy that my brothers usually got (they preferred the apple pie) so I didn’t really mind.
