I had a disastrous experience a few years ago when I used the salt and sugar method. I popped the chicken wings in the fridge but totally forgot about them! The result was pure salt that only looked like a chicken wing. So I always caution that if you do use the salt/sugar/water method, only do it for up to 4 hours. With buttermilk, there is no time factor.

To cut down on prep time, I like to use a rotisserie chicken. Chop the cooked chicken and spread in the bottom of a 9x13-inch casserole dish. Next mix together the Cream of Chicken Soup, Cream of Celery Soup and sour cream. Spread over the chicken. Sprinkle a bag of stuffing mix over the soup mixture. I like to use Pepperidge Farm stuffing mix. Finally, pour some chicken broth and melted butter on top. SO quick and easy! I had this ready to bake before the oven had fully preheated.

We are big fans of this Yum Yum Chicken. It  has all of our favorites in one pan - creamy sour cream chicken casserole with stuffing mix. This Yum Yum Chicken is comfort food at its best. All you need is a simple vegetable on the side. Here are a few of our favorite recipes from the site:

This recipe is from Plain Chicken reader, Cheryl Ener.  This is her husband's grandmother's chicken casserole recipe.  Cheryl emailed me this recipe back in June, and I am just now posting it (slacker - I know).

Yum Yum Chicken

Cook Time:40 mins
Total Time: 2 hours 40 mins

Ingredients:

  • ½ cup sugar
  • 2 quarts water
  • 10 assorted chicken parts (I used thighs and drums)
  • ½ cup kosher salt

Yum Yum Sauce:
  • 1 cup mayonnaise
  • 1 tsp sugar
  • ⅛ tsp cayenne pepper
  • ¼ cup water
  • 1 tsp tomato paste
  • 1 tbs melted butter
  • ½ tsp garlic powder
  • ¼ tsp paprika

Instructions:

  1. First, Mix the water, kosher salt and sugar in a large non-reactive container.
  2. Second, Place chicken in the brine and refrigerate for at least 2 hours but no more than 6 hours.
  3. Next, Mix all yum yum sauce ingredients in a small bowl; set aside.
  4. Preheat your grill to medium-high (about 350℉).
  5. Place chicken on the grill skin side down and cook for 15 minutes, watching so the skin does not burn. Turn skin side up and cook for 15 minutes.
  6. Brush with yum yum sauce and grill each side for an additional 5 minutes.
  7. Serve with additional sauce for dipping.
  8. Make in the oven--Preheat oven to 400℉. Place chicken on a lightly greased baking sheet skin side down. Bake for 15 minutes then turn skin side up and bake for an additional 15 minutes. Proceed as in grill method.

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat. They came in a disposable aluminum container that had little partitions with a protein, a starch (usually mashed potatoes – instant), a veggie like corn or peas, and a little square of dessert. Anyway, my favorite was the Salisbury steak – mostly because it came with the cherry pie which was my preferred dessert option.  The steak itself was basically a hamburger with gravy on it, which wasn’t nearly as offensive as the awful gelatinous round slices of fake turkey with gravy that my brothers usually got (they preferred the apple pie) so I didn’t really mind.
