While working on set, Craft Services would have Spaghetti Squash with Mushrooms and Sauce all ready for me, every day. A huge dollop of Cottage Cheese would be on top! Imagine if they would have used a Pressure Cooker? Sure would have saved them time and room in their Food Trucks. The lead Make Up Artist, Wendy, was a good friend of mine. We met while I was teaching Aerobics at Slimmons, Richard Simmons’ Exercise Studio in Beverly Hills. She was one of my students and we became friends and then started working together.

The Spaghetti Meat Sauce is a different recipe from my regular Pressure Cooker Spaghetti & Pasta Sauce, so let me know which you prefer. The Beef Stock and Worcestershire Sauce really give this Pressure Cooker Spaghetti Squash and Meat Sauce a real boost. Fish Sauce and Worcestershire Sauce both act as flavor enhancers or Umami, which is the word of the year for flavor. 🙂  Use Diced Tomatoes for a chunky Sauce and Crushed Tomatoes for a smoother Sauce.

  • 1 lb Fresh Sausage
  • 1 Small Onion Diced
  • 4 Cloves Fresh Garlic Pressed
  • 1 Green Pepper Diced
  • 1 Large Spaghetti Squash
  • 1 25 oz Jar Organic Pasta Sauce
  • 8 oz Fresh Mushrooms Sliced

Instructions:

  1. First thing you want to do is follow the directions here to cook your spaghetti squash. After it is cooked, put it aside.
  2. Next, put the inner pot into the Instant Pot.
  3. Place the fresh sausage in the inner pot and push the saute button. Be sure to toss it around until it is browned and don't walk away as it will burn fast. (Takes about 5 minutes to brown)
  4. After the meat is fully browned, drain it well.
  5. Then add it back to the pot and dump in the veggies.
  6. Cook it this way for about 5 minutes while giving it a stir here and there.
  7. After the veggies have slightly softened, add the pasta sauce and cook another 5 minutes. Don't forget to stir it.
  8. Now you can either mix in your made spaghetti squash or you can put some on a plate with some of the meat sauce over it.
  9. Enjoy!

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat. They came in a disposable aluminum container that had little partitions with a protein, a starch (usually mashed potatoes – instant), a veggie like corn or peas, and a little square of dessert.
