Inspired by Countryside Cravings fabulous recipe for Easy Taco Soup I created this combination – omitting the off-limit keto ingredients (beans & corn) and adding a little more healthy fat. Quick and Easy Taco Soup Recipe is filled with ground beef, beans, corn and taco seasoning. It’s a quick dinner that uses lots of pantry staples!

This quick and easy taco soup was one of the very first recipes I made as a married woman. I was actually given this recipe by a friend, who also brought the soup with it, and I immediately fell in love. (with the soup…)

One of the main reasons I love this recipe so much is that it uses canned beans, corn, tomatoes and tomato sauce. I always keep a hefty stock of canned beans and tomatoes in my pantry, so it’s an easy dinner to whip up.

Drool-Worthy Keto Taco Soup With Ground Beef & Cream Cheese

Prep Time: 10 Minutes  
Cook Time: 15 Minutes  
Total Time: 25 minutes  
Yield: 10 1x

Ingredients:

  • 1 Teaspoon Oregano
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder (Optional)
  • Sub 3 Tablespoons Taco Seasoning for Cumin, Oregano, Garlic Powder, Onion Powder
  • 2 14 Oz Cans Rotel Tomatoes or Diced (Do Not Drain)
  • 4 Oz Green Chiles
  • 1 Tablespoon Chili Powder
  • 2 Teaspoons Cumin
  • 2 Pounds Ground Beef or Turkey 
  • 1 Small Onion – Diced
  • 1 8 Oz Block of Cream Cheese 
  • 4 Garlic Cloves – Minced
  • 4 Cups Beef Broth (Bone Broth Recommended)

Instructions:

  1. First, Dice Onion 
  2. Second, Combine Chili Powder, Cumin, Oregano, Garlic Powder & Onion Powder in a small bowl
  3. Next, Brown Ground Beef & Onions over medium-high heat until browned
  4. Add in Dry Ingredients 
  5. Add in Minced Garlic & cook another 1-2 minutes
  6. Drain Fat (If Needed) 

Stovetop: Add in beef broth & Rotel Tomatoes (Do Not Drain) Simmer for 5 Minutes. Add Cream Cheese & stir. Cook another 5 Minutes! You’re Done! 

Crockpot: You CAN put the raw ground beef in the crockpot-just be sure to crumble first. Then add in the rest of the ingredients & cook on low for 4-6 hours. (You can also brown the ground beef with the onions prior to loading into the crockpot!) 

Notes:

  • Top with sour cream, avocado slices, Jalapeños & Shredded Cheese

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat.
