I threw in some avocado, a serrano pepper, and cilantro to round out these fat bombs and voila! Deliciousness achieved! So if you follow a keto or paleo diet, or just enjoy a delicious breakfast snack that is packed full of the good fats, then this recipe is the one for you.

I put the recipe into a nutrition calculator (except for the bacon grease which it didn't have info for) and it came up with the following:per serving 202 calories 1.9 grams of carbs 8.9 grams of proteinof course this will vary depending what brands/types of ingredients were used but its a good rough estimate.thank you for this recipe! I can't wait to try it over the weekend!

These Keto Breakfast Fat Bombs are a true lifesaver for frantic (Monday) mornings.  Personally, when I wake up in the morning after my alarm clock gives out a warning I don’t think I’ll ever make it on time.  By the time I grab my books and give myself a look, I’m at the corner just in time to see the bus fly by…wait no, scratch that…that’s Zach Morris, not me. Either way, I’m sure we’ve all had those mornings where we were saved by the bell, so let these little bacon covered bites of heavenly deliciousness make your mornings more calm*, I guess you could say you’re saved by the (fat) bomb.

As you could probably figure out I love my cast iron skillets, but my second favorite piece of cookware is definitely the Instant Pot, followed by my smoker/grill combo but I’m getting off track.  Anyway, if you’ve never made hard boiled eggs in the Instant Pot, no offense… but you’re doing it wrong.  This post from SkinnyTaste covers all the details to make perfect hard-boiled (or soft-boiled) eggs every time that are the absolute easiest to peel.

Instructions:

  1. First, In a large bowl, combine the hardboiled egg, avocado, butter, mayonnaise, serrano pepper, and cilantro. Mash into a smooth paste with a fork or potato smasher. Season with salt and pepper, then add the lime juice and stir.
  2. Second, Prepare bacon in your favorite fashion until crispy, reserving 2 tablespoons of bacon grease. Add the bacon grease to the fat bomb mixture and stir gently. Cover and place in the fridge for 30 minutes, or until the mixture has cooled and can form solid balls. Crumble the bacon into small bits in a small bowl.
  3. Using a spoon, scoop out 6 even-sized amounts of the fat bomb mixture and form into balls. Add the balls to the bacon bits and roll around until completely covered. Serve immediately.

Notes:

  • If you are strapped for time, you can purchase hardboiled eggs at your local grocer, otherwise add eggs to a pot of water and bring to a full, but low, boil. Cover and immediately remove from heat, allow to sit for 12 minutes, then drain and add the eggs to an ice bath and allow to cool completely before peeling. Older eggs peel easier than new eggs.

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat. They came in a disposable aluminum container that had little partitions with a protein, a starch (usually mashed potatoes – instant), a veggie like corn or peas, and a little square of dessert. Anyway, my favorite was the Salisbury steak – mostly because it came with the cherry pie which was my preferred dessert option.  The steak itself was basically a hamburger with gravy on it, which wasn’t nearly as offensive as the awful gelatinous round slices of fake turkey with gravy that my brothers usually got (they preferred the apple pie) so I didn’t really mind. In my opinion, the most important thing to keep in mind when using xanthan gum in a recipe, is that less is usually more. I almost always add it in 1/4 tsp increments, until I get the right consistency. Too much xanthan gum leads to an almost slimy, g...

Keto Dinner | Iceberg Wedge Salad Recipe

This amazing Iceberg Wedge Salad is probably one of the simplest salads you can make because you literally cut a head of lettuce into 4, drench it in some homemade dressing and throw on a bunch of toppings. And good grief its amazing. All those delicious toppings (talking about you, bacon) take it to next level. Perfect salad for lunch or side salad for dinner. I’ve been putting in a bit of an effort with my salad-eating habits. I usually prefer cold salads in the summer and warm roasted vegetables in the winter BUT will eat any salad put in front of my face at any time of year when someone else makes it. This basically means that it takes quite the amazing salad to convince me to make it when it’s freaking freezing outside. The Wedge Salad is a classic American restaurant salad that is as easy to make at home as it is delicious! Crunchy iceberg lettuce, crispy bacon and the quintessential wedge salad dressing: creamy-tangy blue cheese. Make Wedge Salad for a couple or a crowd in minut...
