These Keto Breakfast Fat Bombs are a true lifesaver for frantic (Monday) mornings.  Personally, when I wake up in the morning after my alarm clock gives out a warning I don’t think I’ll ever make it on time.  By the time I grab my books and give myself a look, I’m at the corner just in time to see the bus fly by…wait no, scratch that…that’s Zach Morris, not me. Either way, I’m sure we’ve all had those mornings where we were saved by the bell, so let these little bacon covered bites of heavenly deliciousness make your mornings more calm*, I guess you could say you’re saved by the (fat) bomb.

As you could probably figure out I love my cast iron skillets, but my second favorite piece of cookware is definitely the Instant Pot, followed by my smoker/grill combo but I’m getting off track.  Anyway, if you’ve never made hard boiled eggs in the Instant Pot, no offense… but you’re doing it wrong.  This post from SkinnyTaste covers all the details to make perfect hard-boiled (or soft-boiled) eggs every time that are the absolute easiest to peel.

  • Kosher Salt, to taste
  • Cracked Pepper, to taste
  • Juice of 1/4 Lime
  • 2 Tbsp Bacon Grease
  • 6 Cooked Bacon Slices
  • 1 Hardboiled Egg
  • 1/4 Avocado
  • 4 Tbsp Unsalted or Clarified Butter
  • 1 Tbsp Mayonnaise
  • 1 Serrano Pepper, seeded and diced
  • 1 Tbsp Cilantro, chopped

Instructions:

  1. First, In a large bowl, combine the hardboiled egg, avocado, butter, mayonnaise, serrano pepper, and cilantro. Mash into a smooth paste with a fork or potato smasher. Season with salt and pepper, then add the lime juice and stir.
  2. Second, Prepare bacon in your favorite fashion until crispy, reserving 2 tablespoons of bacon grease. Add the bacon grease to the fat bomb mixture and stir gently. Cover and place in the fridge for 30 minutes, or until the mixture has cooled and can form solid balls. Crumble the bacon into small bits in a small bowl.
  3. Using a spoon, scoop out 6 even-sized amounts of the fat bomb mixture and form into balls. Add the balls to the bacon bits and roll around until completely covered. Serve immediately.

Notes:

  • If you are strapped for time, you can purchase hardboiled eggs at your local grocer, otherwise add eggs to a pot of water and bring to a full, but low, boil. Cover and immediately remove from heat, allow to sit for 12 minutes, then drain and add the eggs to an ice bath and allow to cool completely before peeling. Older eggs peel easier than new eggs.

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat.
