Healthy Recipes | Lasagna Soup

This Lasagna Soup is one of my all time favorites! You get all the flavors of a delicious hearty lasagna in a comforting soup form! It’s loaded with beef, tomatoes and Italian herbs and the melty cheese just takes it over the top. This simple recipe may look a little daunting due to the long list of ingredients but a lot of it is pantry staples you likely already have so don’t miss out on this recipe thinking it’s too much. You get an herbed tomato based broth that’s filled with hearty bits of ground beef, and it’s finished off with a generous mound of cheese that melts perfectly into the steaming hot soup. This One Pot Lasagna Soup recipe can’t get any easier or more delicious!  It boasts layers of cheesy noodles smothered in rich marinara infused with garlic, onion and Italian spices all smothered Parmesan, mozzarella and ricotta  – drool – and all you have to do is brown your beef, dump in the ingredients and simmer away! But now, I am thrilled to introduce my “can’t-get-an...

Keto Dinner | Thai Peanut Zucchini Noodles

Thai Peanut Zucchini Noodles are spiralized zoodles sauteed with shredded carrots, bell pepper, and green onions, tossed in this easy peanut sauce. This 15-minute zucchini noodles recipe makes the perfect side dish, main course, or weekday salad and includes meal prep instructions. Using a vegetable peeler can take a little longer, but I LOVE this option for making wide zucchini noodles. This also works in a pinch, but again, I recommend the tabletop version if you want to spiralize large amounts of zucchini noodles into spaghetti strands. During the summer I love eating meals that are lighter, and sometimes I’m just not in the mood for a salad.  These VegetarianThai Peanut Zucchini Noodles are the perfect hot meal that won’t weigh you down! Now that it’s zucchini season, my spiralizer has been working overtime.  Do you own a spiralizer?  I love mine, but I’ll admit that sometimes I get lazy and I buy my zucchini noodles at the store.  It can get costly over time, so...

Keto Dinner | Keto Salisbury Steak with Mushroom Gravy

My earliest memory of Salisbury Steak was back when we were kids and we’d beg my mom, who cooked everything from scratch, to let us get frozen “TV dinners” as an occasional treat. They came in a disposable aluminum container that had little partitions with a protein, a starch (usually mashed potatoes – instant), a veggie like corn or peas, and a little square of dessert. Anyway, my favorite was the Salisbury steak – mostly because it came with the cherry pie which was my preferred dessert option.  The steak itself was basically a hamburger with gravy on it, which wasn’t nearly as offensive as the awful gelatinous round slices of fake turkey with gravy that my brothers usually got (they preferred the apple pie) so I didn’t really mind. In my opinion, the most important thing to keep in mind when using xanthan gum in a recipe, is that less is usually more. I almost always add it in 1/4 tsp increments, until I get the right consistency. Too much xanthan gum leads to an almost slimy, g...
